🌱 Vegan Shawarma Recipe (Mushrooms or Cauliflower)

No meat, no problem. This vegan shawarma hits all the right notes—smoky, savory, deeply spiced, and totally satisfying. Mushrooms give you that meaty bite, cauliflower brings the golden crisp. Either way? Flavor bomb.

🧂 You’ll Need:

Main Ingredient (pick one):

  • 1 head cauliflower, cut into florets or

  • 1 lb mushrooms (portobello, oyster, or cremini), sliced thick

Marinade:

  • 2 tbsp Spice Souk Shawarma Blend

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt to taste (if not in your blend)

  • Optional: 1 clove garlic, minced

🔥 How to Make It:

  1. Toss + Marinate
Coat the cauliflower or mushrooms in the marinade. Let it sit for at least 15–30 minutes (longer if you’ve got the time).

  2. Cook Your Way

  • Oven: Roast at 425°F (220°C) for 25–30 minutes, flipping halfway

  • Air fryer: 375°F for 15–18 minutes

  • Skillet: Medium-high heat, 10–12 minutes, until golden and crisp

  1. Serve It Up
Pile into warm pita with lettuce, tomatoes, onions, pickles, and tahini sauce or vegan yogurt.
