2 tbsp Spice Souk Extra Virgin Olive Oil

1 yellow onion, finely chopped

1–2 carrots, diced

1 medium potato, peeled and diced

1 cup red lentils, rinsed

6 cups water or vegetable/chicken broth

2 tsp Spice Souk Cumin

1 tsp Spice Souk Dried Mint

½ tsp Spice Souk Turmeric

ÂĽ tsp Spice Souk Paprika

â…› tsp Spice Souk Cayenne (optional for a little kick)

½ tsp kosher salt (adjust to taste)

Black pepper to taste

Juice of 1 lemon (for serving)

Optional: parsley, fried pita croutons, or green olives for garnish
🍲 How to Make It:

Sauté the Base
In a large pot, heat olive oil. Add onion, carrots, and potato. Sauté 5–7 minutes, until soft and golden. -
Add Lentils & Spices
Stir in lentils and all the spices—cumin, mint, turmeric, paprika, cayenne, salt, and pepper. Let them toast for a minute to unlock the flavor. -
Simmer
Pour in the water or broth and bring to a boil. Reduce heat and simmer for 25–30 minutes, uncovered, until lentils and veggies are tender. -
Blend It Up (Optional)
For a creamy soup, blend with an immersion blender. Or keep it chunky—your kitchen, your call. -
Finish & Serve
Add lemon juice to brighten. Serve hot with fresh herbs or a handful of pita chips on top.
