🍲 Moroccan-Spiced Veggie Tagine Recipe

A one-pot veggie wonder with ras el hanout magic

This tagine is slow-cooked comfort without the fuss. Packed with soft veggies and simmered in a gently spiced tomato broth using Spice Souk Ras el Hanout, it’s rich, fragrant, and feels like a hug from Morocco. Bonus: It’s vegan, gluten-free, and perfect over couscous or rice.

Ingredients:

  • 2 tbsp Spice Souk Extra Virgin Olive Oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, chopped

  • 1 zucchini, chopped

  • 1 small sweet potato or potato, diced

  • 1 cup canned chickpeas (rinsed)

  • 1 cup canned diced tomatoes

  • 1½ cups vegetable broth

  • 1 tbsp Spice Souk Ras el Hanout

  • Salt & pepper to taste

  • Optional: handful of raisins or chopped dried apricots

  • Optional garnish: chopped parsley or cilantro

Instructions:

  1. In a large pot, heat olive oil and sauté onion and garlic until soft.

  2. Add carrots, zucchini, sweet potato, and chickpeas. Stir in ras el hanout.

  3. Add diced tomatoes and broth. Bring to a simmer.

  4. Cover and cook for 25–30 minutes, until veggies are tender.

  5. Add raisins/apricots in the last 5 minutes if using.

  6. Taste and season. Serve over couscous, rice, or with warm flatbread.

👉 A little dollop of yogurt on top never hurt either.
