🌿 Mediterranean Lentil Soup Recipe

This is the kind of soup that hugs your insides. Simple, hearty, and spiced just right—our Mediterranean Lentil Soup is a weeknight staple and a nod to old-world kitchens. With warming cumin, golden turmeric, and a touch of mint, every bowl is packed with flavor and feel-good nourishment.


đź§‚ Ingredients:

  • 2 tbsp Spice Souk Extra Virgin Olive Oil

  • 1 yellow onion, finely chopped

  • 1–2 carrots, diced

  • 1 medium potato, peeled and diced

  • 1 cup red lentils, rinsed

  • 6 cups water or vegetable/chicken broth

  • 2 tsp Spice Souk Cumin

  • 1 tsp Spice Souk Dried Mint

  • ½ tsp Spice Souk Turmeric

  • ÂĽ tsp Spice Souk Paprika

  • â…› tsp Spice Souk Cayenne (optional for a little kick)

  • ½ tsp kosher salt (adjust to taste)

  • Black pepper to taste

  • Juice of 1 lemon (for serving)

  • Optional: parsley, fried pita croutons, or green olives for garnish


🍲 How to Make It:

  1. Sauté the Base
    In a large pot, heat olive oil. Add onion, carrots, and potato. Sauté 5–7 minutes, until soft and golden.

  2. Add Lentils & Spices
    Stir in lentils and all the spices—cumin, mint, turmeric, paprika, cayenne, salt, and pepper. Let them toast for a minute to unlock the flavor.

  3. Simmer
    Pour in the water or broth and bring to a boil. Reduce heat and simmer for 25–30 minutes, uncovered, until lentils and veggies are tender.

  4. Blend It Up (Optional)
    For a creamy soup, blend with an immersion blender. Or keep it chunky—your kitchen, your call.

  5. Finish & Serve
    Add lemon juice to brighten. Serve hot with fresh herbs or a handful of pita chips on top.
