🥗 Za’atar Chickpea & Quinoa Power Bowl Recipe

A bold and wholesome Middle Eastern lunch bowl

This isn’t just a salad—it’s a full-on flavor bomb in a bowl. Protein-packed quinoa and chickpeas meet crunchy veggies and a citrusy za’atar dressing that ties it all together. Perfect for meal prep, light dinners, or lazy lunches with style.

Ingredients:

For the Bowl:

  • 1 cup cooked quinoa (any color)

  • 1 cup canned chickpeas, drained & rinsed

  • 1 small cucumber, chopped

  • 1 cup cherry tomatoes, halved

  • ÂĽ red onion, thinly sliced

  • 2 tbsp chopped parsley or mint

  • Optional: a few olives or crumbled feta

Za’atar Dressing:

  • 2 tbsp Spice Souk Extra Virgin Olive Oil

  • 1 tbsp lemon juice

  • 1 tsp Spice Souk Za’atar

  • Salt & pepper to taste

Instructions:

  1. Whisk all dressing ingredients in a small bowl.

  2. In a large bowl, combine quinoa, chickpeas, cucumber, tomatoes, onion, and herbs.

  3. Pour the dressing over the bowl and toss gently.

  4. Add olives or feta if you’re feeling fancy. Serve cold or room temp.
